Sautéed Oyster Mushrooms

This pan-fried oyster mushroom recipe is a simple, delicious way to prepare oyster mushrooms. They make a great side dish or addition to your favorite meals.

Ingredients

oyster mushrooms: any color or variety

extra virgin olive oil

garlic cloves

fresh thyme

butter or ghee

sea salt

black pepper

How to

  1. Once harvested (or purchased), cut the mushrooms into equally sized pieces so that they’ll cook evenly.
  2. Heat two tablespoons of olive oil in a large, heavy skillet over medium high heat.
  3. Spread the mushrooms out in an even layer and let them cook, undisturbed, for 3-5 minutes until they start to brown.
  4. Give the mushrooms a toss and let them cook for another 3-5 minutes until they are browned all over.
  5. Add two tablespoons of butter or ghee to the pan along with a few smashed garlic cloves and sprigs of thyme, then lower the heat to medium low.
  6. Cook for another 5 minutes, spooning the butter over the mushrooms, until they are dark brown and almost crispy. Season with salt and pepper to taste.

Pan-fried oyster mushrooms are great in scrambled eggs, but they make an amazing addition to almost anything.

A few other suggestions are:

  • Top them on some grilled steak or chicken.
  • Toss them in your favorite pasta dish for a major flavor boost.
  • Use them as a great topping on avocado toast.

Depending on how you plan to serve these mushrooms, you can cut them into thinner or thicker slices. Just be sure to adjust the cooking time accordingly.

Be careful not to burn the butter as you’re heating it. This recipe moves quickly, so it’s best to stay close by and have all your ingredients prepped and ready to go.

If the mushrooms feel heavy, they may be holding some moisture. I like to cook them in a dry pan over medium-high heat to allow the excess moisture to evaporate.

If you have other veggies that you want to use or just want to switch things up, you can add them to the pan to cook with the mushrooms. I like to add thinly sliced onions.
